My "18th time's a charm" Pancakes



You know how some people find their perfect pancake recipe on the first try? Yeah, that wasn’t me. It took 18 tries, but hey, 18th time's a charm, right? 🥞



After countless batches of pancakes that were too flat, too thick, too burnt (oops! that was my fault), or just plain wrong, I finally nailed it. And, of course, I had to tweak it a little because that's just the way I bake. A pinch more sugar here, a dash of vanilla there, and voilà! The perfect pancakes were born.





This recipe is so special that it earned a spot in my hand-written recipe book. You know, the one that’s a bit worn around the edges and splattered with batter, but filled with love? I plan to pass it down through the generations, ensuring my great-great-grandkids can enjoy these perfect pancakes too. And remember what hand-writing looks like, am i right?


But the best part of finding this recipe? It sparked a whole new family tradition. We started having themed pancake competitions! Each weekend, we pick a new theme – from video game characters to favorite hobbies – and everyone decorates their pancakes accordingly. The creativity that comes out of this is amazing, and the kids absolutely love it. Plus, they’ve become quite the little pancake artists!

"18th Time's A Charm" Pancake Recipe



Ingredients


2.5 cups of milk

6 teaspoons of white vinegar

3 tablespoons of sugar

3 cups of all purpose flour

3 teaspoons of baking powder

1.5 teaspoons of baking soda

0.5 teaspoons of salt

3 eggs

6 tablespoons of melted butter


Method


  1. 10 minutes ahead of time, combine milk and vinegar to make the "buttermilk"

  2. In a medium bowl, combine all dry ingredients and mix. Then make a well in the centre of the flour mix.

  3. Melt the butter and also crack and whisk the eggs separately. Remove the chalazae (the stringy, globby structure meant to keep the yolk in the middle of the egg). Doing this means you don't over mix the batter trying to blend the egg well.

  4. Into the flour well, pour the buttermilk, eggs and butter.

  5. Very slowly mix by folding batter. Do Not Over Mix! The sign of a good batter in when you discover little clumps of unmixed flour. When you find them, gently mix it in with surrounding batter, not the whole bowl.

  6. Have pan of choice on med-high (I use the NordicWare Silver Dollar Pancake Pan), pour batter (I use a cookie scoop) and flip when you see a few bubbles on top 


They should be so thick and fluffy!! Yum!


I serve with berries, bananas, fresh whipped cream, syrup and cocoa nibs.
